ABSTRAK
Kajian ini menyentuh tentang kaedah pemprosesan minima terhadap tiga jenis sayuran terpilih iaitu tunas kobis, sonak jagung dan ubi kentang. Setiap kaedah pemprosesan bagi sayur yang berbeza mempunyai langkah yang sedikit berbeza antara satu sarna lain mengikut kesesuaian kaedah tersebut untuk mengekalkan kualiti produk pada tempoh penyimpanan 10 hari. Sampel tunas kobis menjalani pembasuhan berulang sebanyak 3 kali selepas dibelah dua. Sampel sonak jagung pula hanya menjalani pemprosesan asas yang melibatkan pembasuhan dan pemotongan, dan sayur ini dibelah dua serta dipotong dua kepada saiz yang seragam. Ubi kentang dipotong kepada bentuk dadu bersaiz 2x2x2 em dan diberikan perlakuan haba iaitu peneeluran pada suhu 85°C selama 5 minit, bagi mengelakkan pemerangan isi selepas dikupas. Ketiga-tiga jenis sayur direndam dalam larutan kalsium klorida 1% bagi menambah kekuatan tekstur dan juga sebagai agen antimikrob pada permukaan sayur. Setiap sampel dibungkus dengan 3 jenis pembungkusan iaitu kontainer polypropylene CPP) dengan penutup, plastik polyethylene CPE) yang disimkan dengan haba serta bekas polystyrene CPS) yang di 'staple'. Dua jenis suhu penyimpanan telah digunakan iaitu 3-6°C dan lO-13°C . Kualiti sensori bagi setiap jenis sayur, secara amnya, lebih dikekalkan dalam pembungkus PP yang berketelapan wap serta udara yang rendah. Namun pengekalan kualiti sensori adalah lebih baik sekiranya sam pel disimpan pada suhu yang lebih rendah. Kehilangan berat sampel pula bertambah secara relatif daripada pembungkusan PP kepada PE dan seterusnya PS pada kedua-dua jenis suhu simpanan. Bacaan pH bagi keseluruhan sampel adalah tidak banyak berubah dan masih berada pada tahap kurang berasid yang mana lebih besar daripada pH 5 tanpa dipengaruhi oleh jenis pembungkus mahupun suhu penyimpanan. Namun terdapat kenaikan dalam keasidan sampel berkadaran dengan tempoh simpanan. Secara relatifnya, jenis pembungkusan tidak banyak mempengaruhi kandungan vitamin C dalam sampel. Namun kehilangan vitamin C adalah lebih banyak pada suhu simpanan yang tinggi iaitu pada lO-13°C berbanding dengan suhu 3-6°C. Jumlah populasi mikroorganisma yang hadir di dalam ketiga-tiga sayur terproses minima pada masa selepas sahaja diproses dan selepas 10 hari penyimpanan adalah berada pada julat bilangan yang memuaskan dan selamat untuk dimakan.

The scope of this reseach is on the application of minimally processing methods on 3 varieties of selected vegetables namely cabbage sprout, baby corn and potalD. Each of the different variety is treated slightly different based on its suitability to retain the product quality for 10 and 5 days storage. The cabbage sprout samples undergo 3 sequential washing after logitudal cutting. The baby corn samples undergo only basic processing that include washing and cutting inlD uniform sizes. On the other hand, potato were diced ID 2x2x2 em size and undergo heat treatment which is blanching at Bg' C for 5 minutes to prevent surface browning after peeling. All of the varieties were soaked in 1 % calcium chloride solution to enhance firmness and also as an antimicrobial agent on their surface. Each of the sample type was packed in 3 types of packaging materials that were PP container with lid, PE plastick which was heat-sealed and PS tupperware which was stapled. The samples were then stored in 2 different temperatures that were 3-tfC and 10-lYe The sensory quality for all sample are well retained in PP packaging which has low gas permeability and stored at low temperature. Weight loss were relatively lower in PP packaging and higher in PS packaging in both storage temperatures. The pH of samples do not have much changes and still within low acidic level which was higher than pH 5 without being affected by packaging type or storage temperature. But the acidity of samples has increased over time during storage in both temperatures. Relatively, packaging type have low effect on vitamin C content of the samples, but the higher loss of vitamin C was observed at higher storage temperature. The microbial loads in all of the 3 types of the minimally processed vegetables, either soon after processing or after 10 or 5 days of storage, they are still within the safe range and are suitable and safe for consumption.

PENDAHULUAN
1.1 Pengenalan
Dalam dunia yang serba moden masa kini, keperluan pengguna terhadap asas-asas
kehidupan terutamanya makanan semakin berubah. Bagi mengurangkan masalah
kesibukan harian, mereka lebih cenderung menggunakan alatan atau bahan-bahan
yang paling mudah dan memakan masa yang sing kat untuk dikendalikan. Ini
termasuklah bahan-bahan makanan terutamanya bagi suri rumahtangga yang
berkerja. Dewasa ini kebanyakan bahan makanan yang dipasarkan adalah dalam
bentuk resipi yang boleh terus dimakan dengan pemprosesan lanjutan yang mudah,
contohnya perencah nasi goreng dan juga bubur atau sup dalam pek yang hanya
perlu dipanaskan dan bolehlah dihidangkan. Oleh kerana sayuran adalah
penyumbang utama kepada nutrien terutamanya pelbagai vitamin dan mineral yang
penting kepada pertumbuhan dan kesihatan manusia, maka penyediaan sayuran
dalam bentuk sedia untuk dimasak atau dijual dalam keadaan sudah terproses
minima juga boleh mengatasi masalah kesibukan pengguna masa kini.
Sayur-sayuran terproses minima adalah secara relatifnya masih baru dan
suatu segmen industri makanan yang sedang giat membangun. Produk-produk ini
secara amnya telah dibersihkan, dikupas atau dipotong, dipekkan, dan seterusnya
dikekalkan oleh penyejukkan bagi menyediakan produk yang masih bernutrisi tinggi,
lebih mudah dan perisa yang dikekalkan. Walaupun ia telah terproses minima, ia
masih dalam keadaan mentah, segar dan sedia untuk dimakan atau dimasak. Sayur
sayuran dan buah-buahan terproses minima adalah produk ditambah nilai yang

direka bagi memenuhi permintaan meningkat bagi penyediaan dan pengambilan
makanan yang lebih mudah (Lamikanra, 2002). Pada awalnya, produk terproses
minima dibangunkan bagi menyediakan bekalan bagi hotel, restoran, servis katering
dan pelbagai institusi lain. Baru-baru ini, ia telah diperkenalkan kepada bahagian
borongan. Penganalisa industri di Amerika Syarikat menunjukkan bahawa penjualan
bagi produk ini adalah kira-kira US $11 billion pad a tahun 2000. Jualan dijangkakan
akan meningkat 10 hingga 15% setiap tahun untuk lima tahun akan datang
(Lamikanra, 2002). Peningkatan jualan yang sama telah diperhatikan sejak tahun
1980an di Eropah, terutamanya di Perancis dan United Kingdom (Alzamora, Tapia &
Lopez-Malo, 2000). Negara lain juga telah mula mempertimbangkan potensi pasaran
bagi pemprosesan minima bukan sahaja bagi keperluan makanan dalaman tetapi
juga untuk ekspot.
Walaupun pemasaran sayuran dalam bentuk terproses minima telah pun
terdapat di pasaran tempatan kita secara kecil-kecilan namun kebanyakan peniaga
masih tidak peka terhadap cara pemprosesannya yang paling sesuai serta keadaan
penyimpanan yang boleh memanjangkan lagi tempoh simpanannya disamping
mengekalkan kandungan nutrisinya. Tambahan pula tidak semua sayuran boleh
menjalani pra-pemprosesan ini dan seterusnya boleh bertahan dalam tempoh masa
yang lama kerana tujuan utama pemprosesan minima ini ialah untuk menyediakan
produk segar kepada pengguna dengan tempoh penyimpanan yang paling
maksimum dan pada masa yang sarna memastikan produk selamat, senang
digunakan serta kandungan nutrisi dan kualiti sensori yang dikekalkan (Burns, 1995).
Pemprosesan minima ini merujuk kepada proses yang hanya melibatkan
aktiviti-aktiviti asas contohnya pembersihan, pengupasan, pemotongan, penghirisan
dan pembungkusan atau dengan kata lainnya pemusnahan fungsi tisu sayuran
adalah pada tahap yang paling rendah tanpa melibatkan tindakan haba ataupun
bahan awet lain yang boleh mematikan sel sayuran (Shewfelt, 1987). Sememangnya

proses inl akan mengakibatkan peningkatan kadar respirasi dan penghasilan etilena
(Sa Itve it, 1996), dan juga reaksi biokimia yang bertanggungjawab terhadap
perubahan wama (termasuklah pemerangan), perisa, tekstur dan kualiti nutrisi
produk (Marita, 1996).
Oleh itu, adalah penting bagi memilih sayur yang sesuai serta
mengamalkan kaedah pemprosesan yang paling efektif bagi mengekalkan kualiti
produk. Selain daripada itu, faktor persekitaran juga menyumbang kepada
ketahanan kualiti serta pemanjangan hayat penyimpanan produk dan terdapat
beberapa cara yang telah digunakan iaitu penyejukan, pengawalan kelembapan,
penambahan bahan kimia conto~nya asid askorbik dan kalsium terhadap produk
(Burns, 1995) dan juga kaedah pembungkusan produk yang diamalkan (Hotchkiss &
Banco, 1992). Oleh yang demikian, produk terproses minima memerlukan perhatian
yang lebih disebabkan oleh magnitud respirasi serta faktor enzim dan juga aspek
mikrobiologi yang mempengaruhi kualiti serta keselamatannya.
LI2 Objektif
Kebanyakan pengguna masa kini masih tidak mengetahui apakah yang dimaksudkan
dengan pemprosesan minima terutamanya apabila ia diaplikasikan terhadap sayur
sayuran kerana kaedah ini selalunya hanya dijalankan kepada buah-buahan seperti
betik, nanas, jambu batu dan tembikai, dan ia bOleh didapati dl pasar raya mahupun
gerai-gerai keeil di tepi jalan. Oleh Itu, melalui kajian ini, ia adalah untuk mencapai
tiga objektif utama iaitu seperti berikut;
I). Mengkaji beberapa jenis sayur-sayuran yang berpotensi menjalani kaedah
pemprosesan minima.
ii). Menjalankan pemprosesan minima ke atas sayur-sayuran terpilih.

iii). Mengkaji kesan perbezaan suhu dan jenis pembungkusan semasa
penyimpanan produk keatas kualiti sensori, ciri fizikokimia, kandungan
vitamin G dan kualiti mikrobiologi.

ULASAN KEPUSTAKAAN
2.1 Definisi sayuran
Menurut Williams, Uzo & Peregrine (1993), istilah "sayuran" biasanya digunakan
untuk merujuk kepada tunas, daun, buah dan akar tumbuhan yang lunak dan dapat
dimakan secara keseluruhan atau hanya sebahagian, segar atau mentah ataupun
dimasak, sebagai pelengkap pada makanan berpati dan daging. Kebanyakan
daripadanya adalah 'herbaseus' (berbatang basah) dan tidak merangkumi buah-buah
manis yang boleh dimakan sebagai pencuci mulut. Sayuran biasanya dituai semasa
tanaman tersebut segar dan kandungan airnya tinggi. Kandungan air yang tinggi
pada sayuran ini menyebabkan pengendalian, pengangkutan dan pemasarannya
menjadi masalah khusus. Pengeluaran beberapa jenis sayur di Malaysia masih belum
cukup untuk menampung keperluan tempatan. Jumlah pengeluaran sayur-sayuran
bagi setiap tahun sukar ditentukan. Perubahan pengeluaran disebabkan oleh luas
kawasan, jenis sayur, cuaca, harga dan juga permintaan pada masa tertentu.
2.2 Faktor nutrisi dalam sayuran
Sayuran memainkan peranan yang penting dalam pemakanan manusia seperti
membekalkan zat makanan. Sayur kava dengan mineral, vitamin, protein dan
karbohidrat. Di samping itu, sayur penting dalam peneutralan bahan-bahan berasid
yang dikeluarkan ketika penghadaman daging, keju dan beberapa makanan lain
(Sahadevan, 1987). Individu memilih sayur untuk dimakan mengikut kegemaran atau
